Steel cut oats are a regular breakfast rotation in my house. We all like different toppings. This one is one of my favorites - chopped fresh dates, bananas and almond butter granola.

Once you eat steel cut oats, say bye bye to gloppy sticky oatmeal. Anyone who dislikes oatmeal has to try steel cut oats before making a final decision. The perfect bowl of steel cut oats is nutty and slightly creamy without being sticky and unpalatable.

Always toast the steel cut oats before cooking for a better texture and a nutty taste. The extra 5 minutes for toasting the oats adds a depth of taste to the oatmeal.

Any breakfast porridge type dish can be made with any other grain as well or a mixture of grains. Keep in mind the different cooking times for the grains.

I usually toast the oats and cover it in water and keep it in the refrigerator overnight. The oats take about 15 minutes to cook in the morning and are ready very quickly because of the overnight liquid absorption.

Ingredients
1 cup dry steel cut oats
1 inch stick cinnamon
1/4 tablespoon salt
2 tablespoons sweetner (honey)
1 cup milk of choice
1/2 cup dried fruits

 

  • Toast steel cut oats in a dry saucepan until it darkens and changes color. Usually no more than 5 minutes on medium heat.
  • Add 3 cups of water, spices (cinnamon) and salt and cover the pan. Once it cools down keep it in the refrigerator overnight.
  • Simmer the oats on a low to medium flame for about 15-20 minutes stirring frequently.
  • If the all the water has been absorbed by the oats overnight, add more water quarter cup at a time or any milk of choice.
  • If you are adding dried fruits, add half now if a different texture is desired. Otherwise leave all for topping later.
  • Take the pot off the flame and cover it for a few minutes.
  • Enjoy with toppings of choice.

Notes
  • Always toast your grains before adding liquid. If you are using quinoa, you might want to soak it for a couple of hours and rinse it before toasting.
  • Experiment with the combinations and send pictures of your favorites.
  • The small quantity of salt is very important.
