Crunchy Cabbage Salad

There are various versions of this salad/slaw that I have enjoyed over the years. The idea for this recipe is courtesy Kim and Po who created versions of the Thai Papaya Salad (Som Tam) with other vegetables. (See below for alternatives).

I have tried this salad with noodles, cucumbers, various types of cabbage, raw mango and any vegetables that can be sliced into thin strips.

The salad itself is very simple and comes together quickly once all the ingredients are sliced.

Mango Mousse

Mango mousse is one of my favorite treats and I have not managed to set a mango mousse that feels light and mousse like. Since I try to avoid dairy, I have been experimenting with vegan versions for a while using agar agar. Using too much agar agar makes the mousse feel like jello and not enough makes it too runny. I think in this recipe the combination of agar agar and chia seeds make it closer to a mousse like consistency. Some considerations to keep in mind:

Puffed Quinoa Treats

Puffed grains are a great base for healthier rice crispy like treats. I have tried in vain to puff grains at home only to end up wasting half the grains by burning them in the pan.

Puffed grains (quinoa, millets, brown rice etc.) are readily available in super markets or online. In addition to using them to make these wonderful treats, they are great topping for puddings and custards.

Banana Bread

Who doesn’t end of up with a large number of over ripe bananas occasionally (or in my case for the past three weeks)? I usually end up peeling them and freezing the bananas for use in smoothies. This week I made two different recipes of banana bread.

These two recipes are super easy when you have an abundance of ripe bananas on your countertop. The riper the fruit, the better your banana bread will taste. This recipe is very quick and can be made in a 9-inch square pan right in my Breville (Toaster oven) in 30 minutes.

Breakfast Grains - Sweet

Steel cut oats are a regular breakfast rotation in my house. We all like different toppings. This one is one of my favorites - chopped fresh dates, bananas and almond butter granola.

Once you eat steel cut oats, say bye bye to gloppy sticky oatmeal. Anyone who dislikes oatmeal has to try steel cut oats before making a final decision. The perfect bowl of steel cut oats is nutty and slightly creamy without being sticky and unpalatable.

Stir Fried Greens

Cooking greens is a great way to consume large amounts of leafy vegetables by seasoning them and making them last longer. Cooked greens have a longer shelf life than raw greens and are easier to consume.

This recipe is a south Indian style stir fry that is quick to cook and can be eaten with rice or bread or added to a grain bowl with some cucumbers and tomatoes.

The same process can also be used to cook other vegetables like shredded cabbage, green beans or a mix of all with a handful of peas.
