As a first-grader, these chicken nuggets were a mandatory feature once a week. What’s not to love? Tasty, juicy breaded chicken nuggets and no care in the world about dieting (what’s that?). Then reality struck. Over the past couple of years, I have grown apart from nuggets just because there are better, more nutritious ways to use chicken in a meal. Nevertheless, I thought I would share this recipe just so you have it when you feel like reliving those carefree days. I like to accompany my chicken nuggets with ketchup or marinara sauce.
Ingredients
- 2 chicken breasts, chopped into three equal pieces
- 1 seasoned bread crumbs
- 2 tablespoons oil
- 2 teaspoons chili powder or paprika
- ½ teaspoon garlic powder
- 1 teaspoons salt
- 1 teaspoon ground black pepper
- 1 egg
- Preheat Oven to 400 F and heat a cookie sheet in the oven.
- Pat chicken dry and add salt, chile powder, garlic powder, black pepper and one tablespoon of oil. Mix thoroughly in a bowl and set aside. At this stage, the chicken can be kept in the refrigerator for a day or two. Any dry seasoning or rub can be used for the chicken. (taco seasoning, barbeque seasoning all work well with these chicken nuggets..
- Lightly beat the egg and dip each piece of chicken in the egg first and then in the breadcrumbs. Pat the breadcrumbs to make them stick to the chicken. Spray the breaded chicken with some oil.
- Remove the hot pan from the oven and place nuggets in the oven and bake for fifteen minutes. Flip, and bake for another ten minutes. Finally, place under the broiler for a couple of minutes.
- Serve with ketchup and condiments of your choice and enjoy!
