A day or two after taco Tuesday or taco Thursday or taco any day always turns one of the meals into a chicken bowl with the leftover from the taco meal. Some rice, black beans, and lettuce round up the leftover chicken into a quick meal. Make it your own with additional toppings (salsa, guac, or chips). 

Ingredients
  • One serving cooked chicken breast or thighs slice into strips. (I have used chimichurri chicken here)
  • 1 cup of cooked rice. If you are using leftover take-out rice, season it with a bit of lime or lemon juice and some spices (curry powder, taco mix, or my favorite everything but the bagel seasoning).
  • 1-2 cups chopped lettuce or any greens or store-bought slaw
  • ½ cup black beans
  • ½ cup guacamole, salsa, and or sour cream.
  1. Reheat the chicken in the air fryer for 5-7 minutes covered in foil.
  2. Heat the rice in a pan or microwave. If you are using freshly cooked quinoa or rice, dress the grains with salad dressing, salt, and pepper, or my favorite everything bagel seasoning.
  3. Assemble the rice and beans in a large flat bowl. Add the chopped greens or slaw on the side. Top the lettuce with guac or salsa. Top with warm chicken slices.
  4. Enjoy!
