Chicken is usually my protein of choice on most days. It is easy to make and versatile enough for everything. After listening to the virtues of the air fryer repeatedly, I decided to try out 6 recipes of air-fried chicken that can be prepped once a week and used throughout the week. Once cooked, I can use the chicken in sandwiches, salads, and wraps at short notice. Air-fried chicken lasts in the refrigerator for three or four days.
My attempt is to use only one blend of spices. I do not have the patience or skill to blend different spices to make a marinade. When I have access to Trader Joe’s and pre-mixed blend in small quantities, why not try to use them one at a time. This week is Berbere chicken. Berbere is a spice blend used extensively in Ethiopian cooking and works well with vegetables and poultry.
- 4-5 chicken legs
- 1 tablespoon oil
- 1 tablespoon berbere seasoning
- Salt
- 1 teaspoon lime or lemon juice
Instructions
- Mix all ingredients (except chicken) in a bowl large enough to accommodate chicken legs.
- Add chicken and legs and coat thoroughly
- Marinade for a couple of hours, but no more than overnight.
- Add chicken legs to the air fryer and cook for 17-20 minutes turning halfway through.
- Enjoy!
