This breakfast sandwich has two of my favorite ingredients - avocado and egg. You can add any additional toppings (bacon, hummus, pico). Change up the bread (sourdough, english muffin, croissants) or change the preparation of the egg. I have a soft boiled egg in this one, but scrambled or hard boiled works as well or even an omelete. Personally, I like the runny yolk of a soft boiled egg that adds some moisture the mix. Add some leafy sprouts and you have a nutritious breakfast sandwich that can be had on the go. 

Ingredients
  • ½ Medium sized avocado
  • ¼ teaspoon kosher salt
  • 1 teaspoon everything bagel seasoning
  • 2 slices hearty bread
  • 1 soft boiled egg
  • Optional: 
  • 1 teaspoon harissa/flavored mayo, aioli, mustard, pesto, salsa
  • 1 teaspoon labneh or any cream cheese or sliced cheese works as well
     
  1. Boil water in a small pan and place the egg gently in the pan once the water comes to boil. Set a timer for 7 minutes and put the egg in a bowl of iced water after 7 minutes . Peel and mash the egg in a bowl.
  2. In a small bowl, combine the mashed egg mashed or thinly sliced avocado, salt, pepper, and lemon juice. Mash again with the back of a fork. Mix well. 
  3. Apply the harissa on one slice of bread and labneh on the second. Spread the mashed goodness onto a well toasted bread (or bagel, and spread evenly. Sprinkle seasoning and top with leafy sprouts.
  4. Enjoy!
