Coming back from school, carrots and hummus was a snack I would have often because it requires zero preparation, tastes good, and is still very healthy (and carrots are also supposed to improve your eyesight). This recipe is a spin-off version of this popular snack and consists of a sourdough toast with hummus and carrot shavings on top. This recipe is super convenient because it still has the healthy ingredients yet also includes some healthy carbs to make the snack more hearty. I also recommend adding some seasonings for more flavor, a personal favorite of mine is red chili peppers.

Ingredients
  • 2 cups carrots (sliced or grated, amount to your liking)
  • 1 teaspoon oil
  • 1 teaspoon everything bagel seasoning 
  • ½ teaspoon zaatar
  • ½ cup green onions
  • Hummus (enough to spread across one piece of bread)
  • Salt
  • 2 slices bread (any kind, my favorite is sourdough)
  1. Heat oil in a pan and add the seasonings and green onions. Stir for  3-5 minutes.
  2. Add grated carrots and saute mixture for  2-3 minutes, less or more depending on whether you like the carrots crunchy or soft. 
  3. Toast bread and spread hummus generously
  4. Spread carrot mixture evenly across the bread
  5. Top with another slice of bread or eat open faced and another dash of pepper or hot sauce
  6. Cut and Enjoy!
