Quick meals assembled from leftovers are the best type of lunch when I have less than 10-15 minutes to put together a meal. I had some leftover baked chicken nuggets and quinoa from the earlier meal. Put them together with some lettuce and salad dressing - and I have a quick meal ready in under 15 minutes. There is no recipe here, just some ideas to assemble a meal from leftovers that do not seem like eating the same things over and over again. The trick is to change the accompaniments and add some fresh produce to make it feel new.

Ingredients
  • 2-3 pieces of baked chicken nuggets (any pre-cooked chicken will work).
  • 1-2 cups of grains (leftovers are perfect, I had leftover quinoa)
  • Salt & Pepper
  • 1-2 cups salad greens
  • Oil
  • Chopped cucumbers, tomatoes, and or carrots (any raw vegetables) or chips
  • 1 teaspoon balsamic vinaigrette

Instructions

  1. Reheat the baked chicken nuggets in the air fryer for 5-7 minutes covered in foil.
  2. Lightly coat the salad greens with the balsamic vinaigrette.
  3. Heat the quinoa in a pan until hot. If you are using freshly cooked quinoa or rice, dress the grains with salad dressing, salt, and pepper, or my favorite everything bagel seasoning.
  4. Assemble the quinoa and chicken in a bowl. Add heated chicken pieces and top with chopped vegetables and or chips.
  5. Enjoy!
