One of my favorite ways to use the cooked chicken from earlier in the week is to make a quick chicken sandwich. Most deli chicken sandwiches are way too bland for my palette. I do like my food seasoned. Chimichurri chicken is already flavored and seasoned substantially and does not need additional condiments to complete the meal. The sandwich comes together quickly while the chicken is heating in the oven.

Ingredients
  • 1 cooked chimichurri chicken thigh
  • Whole-grain roll or 2 slices of hearty bread
  • 2 teaspoons pesto, chimichurri sauce, or mustard/mayo
  • 1 tablespoon shredded cheese, or one slice of cheese
  • Sliced onions (optional)

Instructions

  1. Heat the cooked chicken thigh in foil to prevent drying
  2. Spread chimichurri or any other condiment on bread/roll and toast in a toaster oven.
  3. Add sliced onion and cheese to roll, top with heated chicken thigh.
  4. Alternatively, assemble the entire sandwich and wrap it tightly in foil, and bake in the oven for 15-20 minutes. Depending on the thickness of the cooked chicken, you might need to preheat it a bit.
  5. Enjoy!
