Another one-pot meal that comes together in under thirty minutes. I have used ground turkey, but ground chicken or any mix of ground beef or pork works just as well. Add some onions, tomato paste, and chili sessions and you get yourself a nutritious pot of turkey chili. There are many versions of pre-mixed chili seasonings as there are chili recipes. I use whatever is on hand and readily available. This is not a traditional chili recipe, but it has the flavor, seasonings, and most of the ingredients common with chili. I am not a big fan of peppers or celery, so I substituted with other vegetables.

Ingredients
  • 2 tablespoon olive oil
  • 1 cup diced onions and white part of scallions
  • 4 tablespoons chopped garlic
  • 4 cups finely chopped mixed vegetables.
  • 2 tablespoon fresh oregano, chopped, or 1 tablespoon, dried
  • 4 bay leaves
  • 3 tablespoon chili seasoning
  • 5 tablespoons tomato paste
  • 1 pound ground turkey
  • 2 cups broth or stock
  •  Salt and freshly ground pepper to taste
  • 1 15-ounce can of beans (any kind)

Toppings

  • Shredded cheese
  • Sour cream
  • Lime/lemon juice
  1. Heat the oil over high heat in a large pot, add garlic, onions, chili seasoning, bay leaf, salt, and pepper. Cook until the onion has softened and is lightly brown.
  2. Add the tomato paste and mix, lower the heat to medium for about 5 minutes. Keep stirring at intervals to avoid burning onions and spices.
  3. Add the turkey and stir thoroughly with the onion mixture. Break the turkey down with a spoon to prevent lumps.
  4. Continue until turkey is no longer raw, add the drained beans and stock. Bring to a boil, reduce heat, and simmer for 15 minutes, stirring occasionally.
  5. Add the drained beans and cook for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream, and lime wedges, if desired.
