When I was in middle school, my friends and I used to go to Panera every Friday just to eat this sandwich, it was that good! No joke, this sandwich is probably my favorite meal of all time. So I thought in this recipe I would recreate it for you guys using similar ingredients that I have in my kitchen. The bread that Panera uses for this sandwich is black pepper focaccia (which I really like), but unfortunately, I don’t have that in my house, so I substituted it for sourdough bread. Lastly, my favorite sauces for this sandwich are chipotle mayo or pesto, and I like eating my sandwich with some lays chips on the side. You can use any kind of leftover chicken and or spread of choice.
- 1 loaf focaccia bread cut into quarters
- 1 sliced tomato
- Sliced eight-ounce mozzarella cheese
- ½ small onion chopped
- Chopped basil
- Olive oil
- Two cooked chicken breasts (14oz) shredded
- Pesto or chipotle mayo
Instructions
Step 1
Spread chipotle mayo or pesto sauce over the top and bottom of the focaccia bread.
Step 2
Layer on shredded chicken, onions, cheese, and basil.
Step 3
Press in a panini press on medium heat until the cheese is melted and bread becomes crisp.
Step 4
Serve with some chips and enjoy!
