This one pot recipe is quick and easy and has a bit of everything. Pasta, some vegetables, chicken and cheese - Can't go wrong with this meal in under 30 minutes with minimal effort and very little clean up. You can use leftover cooked chicken that can be added half way through the pasta cooking time. Vary your vegetables (my favorites are spinach and peas) and pasta sauce (I like marinara or arrabbiata) for a different taste and this will never get old.
Ingredients
- 2 tablespoons olive oil
- 1 pound ground chicken or beef
- 1/2 cup onion diced
- 2 cloves garlic minced
- 8-10 oz. penne or any similar pasta
- 2 cups water or stock (use vegetable stock for vegetarians)
- 1.5 cups pasta sauce
- 1/2 cup Parmesan cheese
- 2 cups fresher frozen peas or any greens spinach (kale/swiss chard/collard)
- Fresh herbs (basil or parsley)
- Heat a large pan over medium and add oil. Add onions, garlic and chili flakes (optional) until onions are soft.
- Add ground chicken and stir until the chicken pieces are coated with the onions and garlic. Continue stirring until the ground meat is cooked.
- Pour stock or water and sauce into the pot and add pasta, stirring often. Cover and cook for 10-12 minutes on a medium flame.
- Stir in the cheese until well combined
- Top with fresh basil and or parsley and serve.
